The harvesting schedule of wheat grass is critical. In nature, the purpose of the wheat plant is to produce grain once it has accumulated enough solar energy and nutrients to do so. Therefore, the nutrients in wheat grass reach their peak concentrations just before the jointing stage of the plant. Our wheat grass is harvested at exactly this time period to ensure that our products are at their maximum nutritional content.
Skill is required to harvest at this optimal time, which can be as short as four days. After this time window, the nutrient levels begin to decline as the plant enters the jointing phase.
Once harvested, our wheat grass is freshly processed, usually within one hour of being cut, at our on-site facility. It is dehydrated at a low temperature that preserves nutrients and enzymes.
As soon as the wheat grass comes out of the dehydrator, it is milled into a powder, and packed for shipping.
Tray grown wheat grass juice is made from wheat grass that has not reached its full nutritional potential. It is grown under artificial conditions - usually in a warm greenhouse or indoors under fluorescent lightning - and harvested only 7-10 days after sprouting. Therefore tray grown wheat grass does not have time to develop a significant root system. Furthermore, tray grown wheat grass is often grown with little to no soil . Very few nutrients are absorbed through the roots.
Tray grown wheat grass has a relatively high level of simple sugars. Because tray grown wheat grass develops quickly, it does not have the time to convert these sugars into complex carbohydrates, vitamins, enzymes and proteins.
